They're not your normal Pancakes...

they're supercakes!

This recipe is inspired by Maria Emmerich's keto pancake recipe. There's a little investment of time so we always make a lot at once and heat them up over the following week. We mix Lakanto sugar-free syrup with MCT oil to make it nice and keto. 

First separate all the egg whites from the yolks and whip the whites until their stiff. As the mixer is whipping the whites, mix the whey protein, vanilla, stevia glycerite, and salt with the yolks. When the whites are stiff, mix the yolks in. 

Heat a pan over medium-low heat. Add healthy dollop of coconut oil or butter to pan. Scoop mixture into pan and let cook on one side and then flip. Beware these suckers will puff up so it's good to make your pancakes as flat as possible. 


12 large pasture-raised eggs

1/2 cup of Quest vanilla protein powder

1 teaspoon of vanilla extract

pinch of salt

Optional: 1/2 to 1 teaspoon of stevia glycerite to sweeten the pancakes. This will allow you to do less sugar-free syrup. The cakes will come out ready to eat with a slab of butter.
